Don't forget! You do not have to wash, soak or peel portabella mushrooms. Simply wipe clean with a damp paper towel immediately before using and trim off the root. Store the portabellas in a paper bag in the refrigerator. Remove the plastic wrap from packaged portabellas and refrigerate covered with a paper towel.


Look for mushrooms with a fresh, smooth appearance. Portabellas are best if cooked. Grilled or broiled whole they are perfect as a vegetarian burger, or sliced and sauted for salads, pizzas or pastas. Chop up and use in soups and sauces for a rich, meaty taste.
