Don't forget! You do not have to wash, soak or peel oyster mushrooms. Simply trim the roots from the stem. Store oyster mushrooms in a paper bag in the refrigerator. Remove the plastic wrap from packaged oyster mushrooms and refrigerate covered with a paper towel.


Look for mushrooms with a fresh, smooth appearance and caps that are free of blemishes. Oyster mushrooms are best if cooked. They are often used in Asian dishes and soups but lend themselves well to light sauces for poultry, fish, pasta and vegetarian dishes.
