4 oz. white mushrooms, cleaned and thinly sliced
1 package enoki mushrooms, stems trimmed 1-inch and separated
3 tbs. rice wine vinegar
2 tbs. soy sauce
1 tbs. canola oil, or other light vegetable oil
2 tsp. minced fresh ginger
1 tsp. minced garlic
2 cups snow peas cut diagonally in half.
1 cup peeled and thinly sliced cucumbers
1 cup thinly sliced radishes
In medium bowl whisk together vinegar, soy sauce, oil, ginger and garlic. Toss in cucumbers, white and enoki mushrooms, snow peas and radishes. Serve on lettuce-lined plates.
