Mushroom Confetti Salad

12 large white or crimini mushroom caps wiped clean and thinly sliced.
1 cup chopped celery
1/4 cup minced red onion
1/4 cup chopped red bell pepper
3 tbs. lemon juice
Salt and pepper to taste.

Toss all Ingredients together in a bowl and chill for at least 30 minutes.

Serves 4
